- Q. The honey has crystallized and turned white — is it still safe to eat?
- A. At temperatures below 59°F (=15°C), honey may crystallize — a completely natural process that occurs only in pure, raw honey. This does not affect its quality in any way. To return it to its original state, simply store it in a warm place or place the jar in warm water. (Snowbell flower honey tends to crystallize at temperatures below 62.6°F (=17°C), as it contains a higher ratio of glucose to fructose.)
